All the Good Stuff Muffins (aka Apple Raisin Oatmeal Muffins)
Apple Raisin Oatmeal Muffins
Makes 6 muffins
Ingredients
3/4 C old fashioned oatmeal
1/2 C whole wheat flour
1/4 C sugar or splenda
1/2 tsp. salt
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. cinnamon
1 tsp. vanilla
1 egg, lightly beaten
1/2 C milk
1 T canola oil
1 apple (finely chopped)
1/4 C raisins (or dried cranberries)
Directions:
Preheat oven to 400 degrees.
Grease 6-muffin pan & set aside.
Place oatmeal into blender and process until oats resemble coarse flour.
Combine all dry ingerdients in a bowl.
Make well in center of mixed dry ingredients.
Mix vanilla, egg, oil, & milk in a seperate bowl.
Pour into dry ingredients & stir until moistened.
Stir in apple and raisins (or cranberries.)
Bake for 15 minutes.
