Banana Nut Crunch Muffins
I used some other recipe as a guideline and then changed a bunch of stuff and added other stuff.
I think they taste good, healthy & are filling.
Banana Nut Crunch Muffins
Makes 8 muffins
Ingredients
3/4 C mashed banana (about 1 1/2 bananas)
1 C Banana Nut Crunch Cereal
1 C whole wheat flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/2 C Splenda
1/2 tsp. cinnamon
1/2 tsp. vanilla
1/4 C canola oil
1 egg, beaten
1/4 C milk
Directions
Preheat oven to 35o degrees.
Stir cereal into banana and set aside.
Mix dry ingredients together in a bowl.
Mix vanilla, oil, egg, & milk together.
Pour wet ingredients into dry ingerdients and stir.
Stir in banana mixture.
Pour into greased muffins cups.
Bake for 15 minutes.
Makes 8 muffins.
