Weight Watchers Pumpkin Apple Bread
I took a recipe out of a Weight Watchers Cookbook and changed it to make it more WW friendly. It is baking right now, so, we'll soon see how good my changes were. Here it is:
Pumpkin Apple Bread
2 C whole wheat flour
1/4 C + 1 T Splenda
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. ginger
1/4 C egg substitute
1 C skin milk
1 med. apple, cored & chopped in food processor
1 C canned pumpkin puree
1 T instant oatmeal
Preheat Oven to 350 degrees and spray 9x5 loaf pan.
In a large bowl, combine dry ingredients through ginger.
In a small bowl, beat together egg, milk, apple, and pumpkin.
Add egg mixture to flour mixture & mix just until blended.
Spoon into prepared pan, sprinkle oats on top, and bake for 1-1.25 hours.
Cool for 10 minutes & serve. Makes 10 servings.
