Easy Chocolate Zucchini Coke Cake

1 box chocolate cake mix

1 reg. box of chocolate pudding

1/2 C oil

4 eggs

2 C shredded zucchini (including peel, I actually like to stick mine in the food processor)

1 tsp. vanilla

10 oz. Coca Cola (I used Diet Caffeine Free Coke)

1 packet Taster's Choice Instant Coffee (optional, decaffinated if you choose)

Directions

Combine all ingredients and beat until well blended and moist.

Pour into 2 8"sqaure pans (you could use a 9x13 pan, but you will need to adjust the time).

Bake at 350 degrees for 40 minutes.

Cool and dust with powdered sugar or frost with vanilla frosting if you prefer.
