Marinade for Shish Kabobs

So, while Andy is having Geekfest I am going to a friends house in the evening for a grill out party and am going to bring Shish Kabobs. And since there are hundreds of marinades out there and I found sone I like I thought I'd post this recipe as well. I will be busy cooking, chopping, strippring & preparing on Friday night.


MARINADE FOR SHISH KABOBS
1 1/2 c. salad oil
3/4 c. soy sauce
1/4 c. Worcestershire sauce
2 tbsp. dry mustard
2 tsp. salt
1 1/2 tsp. parsley flakes
1 tbsp. fresh pepper
1/2 c. wine vinegar1 clove garlic, crushed1
/3 c. teriyaki sauce
1/2 c. honey

Put in blender 30 to 40 seconds. Store in tightly covered container in refrigerator. Keeps forever. Use for beef, lamb, shrimp, vegetables. Yields: 3 1/2 cups.

SHREDDED BARBEQUE BEEF (CROCK POT)

So, Andy is having Geekfest (again!) and I decided to make some Shredded BBQ Beef this time. I didn't want to lose the recipe I found or spend the time trying to find it again, so I thought I just post it.


SHREDDED BARBEQUE BEEF (CROCK POT)
5 lbs. chuck roast
1/2 c. brown sugar
1/4 c. apple cider vinegar
2 c. water
2 3/4 c. catsup
1 tbsp. dry mustard
1 lg. onion, chopped
1 to 2 cloves garlic, minced

Cut chuck roast in 3 to 4 inch cubes. Combine the beef, brown sugar, vinegar and water in a crockpot. Cook on Hi for several hours, then turn on low. When beef is very tender, remove beef from crockpot and pour off some of the liquid into a separate container. Shred beef with a knife. Return beef to crockpot and add catsup, mustard, onion and garlic and enough liquid beef water cooked in to make a nice consistency (like sloppy joes). Stir to blend. Cook on low until ready to serve. Serve on buns. Yield: 12 to 14 servings.

El Tequila

So, Saturday night I went out to eat at El Tequila with Kate & Cathy. I ordered a #7, which is slightly different from my #25 in that it does not have an enchilada with it, but still has the chimichanga with guacamole, rice & beans. I thought I would save my self a buck and extra weight on my hips and get the #7. (I almost ALWAYS order #25)

See, what happens when I get the #25 is I only eat half and then I have a whole other meal, but with one less entree on the plate I felt compelled to eat all of it, not just the chimi, but also all the rice & beans. I wasn't going to take home half of the rice & beans and it was just too good to waste. Plus I had a GRANDE (yes it was huge and cost as much as my meal) strawberry margarita blended.

It was a good dinner, but afterward I was too full to eat or drink anything else and I ended up being the sober cab for the night as we went out.

Preview of What's to Come

So, what coming soon is reviews of places we ate at in Costa Rica. We were there for 9 days, so there is a lot of review. This is something you don't want to miss in case you are planning a trip there, especially if it is to Tamarindo, Playa Grande, Arenal, Monteverde, Santa Elena, & Liberia.

Thumbs Up!

These are a couple of new purchases from the grocery store that I give a thumbs up to:

Bolthouse Juices I have gotten the orange, carrot, & Green Goodness. The Oranage is PERFECT just on it's own. The carrot can be quite strong on it's own and I like to mix it half & half with apple juice, but the carrot juice is still very good. And yesterday I purchased the Green Goodness for the first time. It kinda looks like green sludge, but it tastes so good. A friend recommended this one when you are feeling under the weather because it is PACKED with vitamins & minerals. I found the best place to buy this is at a Super Wal-Mart for $2.50. I have bought it at th regular grocery store, but they charge an extra dollar. And there are other flavors yet for me to try, which include: Passion, Vedge, Strawberry Banana, Perfectly Protein, Mango Lemonade, & Berry Boost. Yummy. I am drinking the Green Goodness right now. And the best part is that these juices are 100% Natural. No artificial anything, which is great!

I was buying the other varities (100% whole wheat & Honey Whole Wheat) before, but at my last trip to the bread store (we have a Wonder Bread Store in our community) the cashier was asking what I was looking for in a bread, as I was reading all the labels (yes, I am a label readerand sometimes it takes me a while at the grocery store if there are a bunch of new products I am looking for) and I told her I was looking for a bread with the most amount of fiber that tasted good. So, the previous varities has 3 grams of fiber per slice and I thought they tasted good. But then she told me that they were coming out with a couple of new varities and one of them had extra fiber. Woohoo! I bought a loaf yesterday of the extra fiber version (this has 5 grams of fiber per slice) and I think it has a better flavor than the other varities. So, in one sandwich I get 10 grams of fiber. That's amazing!

Read about the benefits of fiber. Now, we are supposed to be getting 20-35 grams of fiber a day and most Americans get between 10-15 grams. This needs to be improved. So, just one sandwich give me 1/3-1/2 the amount of fiber I need in a day. That's excellent!
